The new task for restaurants in St. Petersburg is to adapt the menu to the interests of new foreign guests. This was reported to TASS by the Governor of St. Petersburg Alexander Beglov.
«An important task is to adapt the menu to the interests of new foreign guests. We take into account the common demand for all megacities for the development of fast food establishments and high-quality street cuisine» , said Beglov.
The governor of the northern capital specified that the government of St. Petersburg has the same tasks as in the whole country: promotion of Russian cuisine, domestic food and beverages. This applies not only to establishments, but also to the gastronomic component of urban events.
«Also an important objective is to increase the consumption of fish products by the population. Increased attention is paid to the development of St. Petersburg cuisine as part of the cultural code of the region. For example, more and more restaurants are taking part in our annual St. Petersburg Breakfast Festival," - specified Beglov.
Today, many establishments in the city emphasize local products and revive historical recipes, as well as offering dishes reflecting the gastronomic traditions of St. Petersburg. Therefore, the focus is increasingly shifting from the mere number of institutions to their quality, conceptuality, and efficiency.
«For us, gastronomy is a full-fledged and promising creative industry. It combines cultural code, tradition, innovation in production and service, artistic design, creating unique experiences. <... > The general requirement is a high level of hospitality, corresponding to the status of St. Petersburg, and implementation of modern service standards» , - explained the Governor of St. Petersburg.
